If you’re planning to join the National ‘Bring Your Kids to Work Day’ this coming April 25, then you busy moms or dads need to make all the necessary preparations. Once you’ve confirmed with your company (if they allow such activity) and once you’re sure your child is eager to go, take some time to plan out the day ahead of time: what to show your kids, what productive things they do while you do your work, and of course, what they’re going to eat for the whole 8-hour stretch.
Whipping up tasty and healthy meals that you can bring in the office for your kiddos need not be difficult nor complicated; besides it is still a regular work day. The daily hustle and bustle and unexpected workload is still inevitable. Hence, we’re here to help you out!
Here are some recipes you can totally make in flash, whether the night before or in the morning before you leave home--all thanks to your trusty microwave oven and our ever-reliable baking ramekins:
Creamy Microwave Mac ‘n Cheese
4 cups water
1 cup elbow macaroni, uncooked
2 tablespoons butter
3 tablespoons flour
1⁄2 teaspoon salt
1 cup low-fat milk
1 cup cheddar cheese, grated
In a medium saucepan, boil water. Add macaroni and cook 8 minutes; drain. In a glass or microwave safe dish, melt butter for 30 seconds. Blend in flour and salt. Stir in milk until smooth.
Microwave 2 minutes, stirring with a fork after 1 minute, until thickened. Stir in cheese until completely melted. Pour well drained macaroni into cheese sauce, mixing well. Microwave at medium-high heat for 3 minutes. If desired, sprinkle top with bread crumbs before serving.
Easy Ramekin Pizza
4 tablespoons all purpose flour
1/8 teaspoon baking powder
1/16 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons milk
1 tablespoon olive oil
1 tablespoon marinara sauce
1 generous tablespoon shredded mozzarella cheese
5 mini pepperoni
1/2 teaspoon dried Italian herbs (basil or oregano)
Mix the flour, baking powder, baking soda and salt together in a microwavable bowl, dish, or mug. Add in the milk and oil with mix together. There might be some lump but that’s okay. Spoon on the marinara sauce and spread it around the surface of the batter. Sprinkle on the cheese, pepperoni and dried herbs. Microwave for 1 minute 10-20 seconds, or until it rises up and the cheese topping are bubbling (timing is based on my 1200W microwave so your timing might vary)
Quick Cup Quiche
1 1/2 tablespoons milk
Ground black pepper
1/4 of a bagel (or similar amount of French bread, etc.)
2 teaspoons cream cheese
1/2 slice prosciutto or ham
Fresh thyme leaves or fresh chopped chives
Beat egg and milk together with a fork in a coffee cup, adding salt and pepper to taste. Tear bread into dime-size pieces; stir in. Add cream cheese; stir in. Tear or cut prosciutto into small pieces; add to mixture. Sprinkle with thyme. Bake in ramekin dishes or directly in a microwave-safe mug.
Microwave on high until done, about 1 minute 10 seconds. Garnish with mustard and fresh thyme or chives.
Choco-Peanut Cake in a Cup
3 tablespoons flour
2 tablespoons sugar
1 1/2 tablespoons cocoa powder
1/4 teaspoon baking powder
pinch of salt
3 tablespoons milk
1 1/2 tablespoons vegetable oil
1 tablespoon peanut butter
Mini marshmallows & nuts (optional)
In a large mug, whisk (with a small whisk or large fork) together the dry ingredients (flour, sugar, cocoa powder, baking powder and salt). Add the milk, vegetable oil and peanut butter. Whisk until smooth. Fold in marshmallows and nuts if desired.
If you’re not confident about using your coffee mugs for cooking the microwave, transfer mixture into baking ramekins instead. Cook in the microwave on high for 1 minute and 10 seconds. (Note: This recipe will rise a lot and then deflate).
